History of the Montreal Bagel

Montreal Bagels were first brought to North America by Jewish immigrants from Eastern Europe at the turn of the 20th Century. The specific recipe for our superior Montreal Bagels originated in a small town in Russia and was introduced to Montreal by Isadore Shlafman in 1919. His family is still making bagels here to this day.
Just like several legendary Montreal establishments, Hansel & Bagel produces their bagels by hand and bakes them in an open-flame brick oven in full view of our customers. Our bagels have a homemade, artisanal character. "Comfort food" in all its reassuring and familiar qualities. They are sweet and dense and are made of malt and egg. They do not contain salt. Once rolled to perfection by our master bakers, our bagels are then boiled in honey-sweetened water before being baked in our open-flame oven. The irregular flames give them a dabbled, light-and-dark surface colour and glaze. Our two most popular varieties are sesame and poppy seed.
The undisputable appeal that bagel aficionados throughout the world have for our unique baking method puts New York bagels (or any other major North American city, for that matter) to shame. Along with the equally famous Montreal Smoked Meat, our bagels travel to the four corners of the globe.
